Sturgeon Chowder
- 2 Tbsp bacon grease
- 1 large onion, thinly sliced
- 2 lbs. sturgeon cut into 1” squares
- 1 quart sliced raw potatoes
- Water
- 1 Tbsp butter
- 1 Tbsp flour
- 2 cups milk
- 1 tsp salt
- 1/8 tsp pepper
- Melt fat in a large sauce pan & lightly sauté onion
- Cut fish into 1" cubes and arrange with the potatoes in the sauce pan in layers
- Add water to barely cover layers & cook gently until potatoes are just tender
- Blend the butter & flour until smooth, thinning with a little of the hot fish liquor
- Return to the pan and stir until slightly thickened
- Add the milk & seasonings
- Simmer 5 minutes.
Sturgeon Stir-Fry
- 2 Tbsp Soy Sauce
- 2 Tbsp Sherry
- 1 Tbsp Honey
- 2 Tbsp vegetable oil, divided
- 1/2 tsp. Chinese five-spice powder
- 1 lb sturgeon cut into 1/2" strips
- 1/4 lb Chinese pea pods
- 2 Tbsp water
- 1/4 lb fresh mushrooms, sliced
- 2 green onions, thinly sliced
- 1/2 pint cherry tomatoes
- 1 5-oz can water chestnuts, sliced
- In large wok or heavy fry pan combine soy sauce, sherry, honey, 1 Tbsp oil and Chinese five-spice powder. Get it hot then add sliced sturgeon. Stir fry 1-1/2 to 2 min. until hot throughout. Remove from pan and set aside.
- Add other Tbsp oil to pan and remaining ingredients. Stir fry for 2 min until vegetables are tender. Put fish back in pan just to heat.
- Serve by self or over rice.
Fillet of Sturgeon Stuffed with Crab Meat
- 4 1/4 lb sturgeon fillets
- 1/2 cup white wine
- 1 Tbs. dried thyme leaves
- 6 oz dungeness crab meat
- 3 oz cream cheese at room temperature
- 6 Tbsp. freshly squeezed lemon juice
- lemon pepper to taste
- Preheat oven to 425 degrees. Carefully split each fish fillet lengthwise to form a pocket for the stuffing. In a shallow baking dish, combine wine and thyme. Add fillets and marinate in refrigerator two hours.
- In a mixing bowl, combine crab meat and cream cheese until well blended. Divide stuffing mixture among the four fillet pockets.
- Place fillets in lightly buttered baking dish. Drizzle lemon juice over each fillet and sprinkle liberally with lemon pepper. Bake 20 minutes or until fish is cooked to desired doneness.
Smoked Sturgeon Dip
Mince 2 cups smoked sturgeon in food processor. (may substitute smoked salmon for sturgeon)
Add:
- 8 oz cream cheese
- 1/2 pint sour cream
- 1/4 cup chopped green onion
- 2 Tsp lemon juice
- Seasoning salt to taste.
Blend and serve with chips or crackers
